Holy Mole-y

I love guacamole. I could sit down and eat an entire bowlful of it and not even think twice about it. While doing so is not the best idea ever, you get my point. I could eat it plain.

Which is exactly why when my mom (Carrie) started making this homemade guac, I was all over it. I had yet to find a really, REALLY good pre-made guac, so it was homemade or nothing.

What you'll need:
  • 2 avocados (ours have been smaller recently, so we do 3)
  • 1 medium sized red onion (like onion? get a bigger one)
  • 1 smaller jalapeno (if you like heat, go bigger. we like ours more avocado-y)
  • about 1 cup chopped cilantro
  • about 2 tbsp lime juice (gives it a nice tang, and makes it super fresh tasting. also helps it from browning!)


STOP RIGHT HERE. DO NOT CUT ANY OF YOUR INGREDIENTS YET. Please, save yourself the hassle and frustration and CUT OPEN YOUR AVOCADOS. Check and make sure they're still good. You will be SO mad at yourself if you get everything else done and you end up with too far gone avocados.


Perfect! I'd suggest putting the 2 halves back together to reduce any more browning on your avocados. Go ahead and chop up the rest of your ingredients.




Done. I would recommend putting in about half of your onion/jalapeno/cilantro to a medium sized bowl first. You can always add more flavor/heat/spice, but once it's there, you can't take it away.

Now time for the avocado. Having the right tools for this makes it so much easier. I don't invest in all of the gadgets and tools for woodworking, they perfected that years ago. But kitchen gadgets? They are here for a reason. Use them.

We got this avocado slicer at Target for probably under $10? We have now used it enough where it has paid for itself three times over.

In order to get the pit out, don't try to dig it out using your fingers/fork. The big knife you're using is great.

Step 1: Whack the pit with your knife so your knife sticks in it like so.


Step 2: Twist knife with pit attached to loosen the pit from the avocado itself.


Step 3: Pit falls out! You can use your fingers to pull it off/tap it off. Whatever works.


Okay now it's actually time to slice the avocado. Grab your avocado slicing tool and get it as close to the top edge of the peel as possible.


Slices through just like butter.



So easy.

Now to start juicing your lime. Since J is mean and refused to let me buy a real juicer so sweet, we got the juicer attachment for the kitchenaid. (PS: I got a real handheld juicer now!) I'd say juice half of your lime first, and if you want it more lime-y, juice the other half.


Throw it all in a bowl and start mashing! Forks work nicely for this.


Ah, perfect. Now grab your favorite tortilla chip/throw it on your taco and devour it as fast as possible enjoy!
